Vancouver Family Photographer | Pieces of Life, January

Winter months are dark and rainy and we spend a lot of time at home or have friends over for playdates. It's been a while since we've baked, so long that Janie is now able to help more than she would make a mess. And let me tell you, I am NOT a baker. Give me a recipe and I can try to put the ingredients together to a T and it'll still taste different everytime. That's why my go-to recipe for Zucchini Orange Loaf is my fail safe. We assembled the ingredients, the girls fought over who got to scoop them out of bags, who got to pour which ones into the mixing bowls, until I made it apparent that without team work, there will be no muffins, period. We even found a little time to do the chicken dance while I make sure the dry and wet ingredients were kept separate. It was a really nice way to spend time together, combining our efforts to create something home-made and delicious for people we care about. I'd say it's a double win because I even remembered to get in the frame! Unfortunately, I couldn't convince either of them to start on the dishes while the muffins were baking. Maybe in another year or so, it might be different?
In case anyone is interested, this is the recipe for the zucchini orange loaf.
Zucchini Orange Loaf (makes 2 loaf pans)
- 3C flour (can substitute whole wheat or spelt)
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 2 eggs
- 1 3/4C sugar (reduce to 1C sugar and substitute with coconut sugar for remaining)
- 1C oil (can substitute 1/2-2/3C unsweetened applesauce)
- 2C grated zucchini
- 1 tbsp grated orange peel
- 2 tsp vanilla extract
